Flaked Salmon and Broccoli Tagliatelle to fill up the kids when they return to school.

    Salmon and Broccoli Tagliatelle

    300g Tagliatelle

    1 tbsp Olive Oil

    1 Onion, Finely Chopped

    1 Clove Garlic, Finely Chopped

    300g Soft Cheese

    1 Lemon, zested and juiced

    Half Broccoli

    1 pack of 2 cooked marinated Salmon fillets

    Fresh parsley for garnish, finely chopped

    Method

    Put the pasta in a pan of boiling water and cook according to the instructions on the packet.

    Drain, reserving 150ml of the pasta water.

    Meanwhile, heat the oil in a large pan over medium heat and cook the onion, broccoli and garlic for 5 minutes until softened.

    Stir in the soft cream cheese and the lemon zest and juice. Bring to a gentle simmer, then stir in the pasta along with the reserved cooking water.

    Stir through the cooked salmon and half the chopped parsley. Divide between bowls and serve with a little seasoning.
