Whole Salmon

Ingredients
- 1 Whole Salmon
- 2 Lemons
- 2 Oranges
- Fresh Herbs, such as Dill or Thyme
- 100ml White Wine
Method
- Heat the oven to 200°C/180°C fan/Gas Mark 6
- Wipe the inside of the salmon with kitchen roll and place onto a large baking tray.
- Grate the rind from the lemons and oranges, then slice them thickly.
- Stuff the salmon with the sliced lemons and oranges
- Score the top of the salmon 6 times slicing down as far as the bone.
- Drizzle over the white wine and season to taste
- Cover loosely with some tin foil and bake in the oven for 60 minutes.
- Use a temperature probe to check the fish is cooked - it should be 72°C
- Remove from the oven and allow the fish to rest
- If you prefer, remove the head, fins, gills, and tail before serving and gently peel off the skin
- Garnish with the grated lemon and orange rind and a sprinkle of fresh herbs, such as dill or thyme
- Cut into individual portions and enjoy
