Whole Salmon

Ingredients

  • 1 Whole Salmon
  • 2 Lemons
  • 2 Oranges
  • Fresh Herbs, such as Dill or Thyme
  • 100ml White Wine

Method

  1. Heat the oven to 200°C/180°C fan/Gas Mark 6
  2. Wipe the inside of the salmon with kitchen roll and place onto a large baking tray.
  3. Grate the rind from the lemons and oranges, then slice them thickly.
  4. Stuff the salmon with the sliced lemons and oranges
  5. Score the top of the salmon 6 times slicing down as far as the bone.
  6. Drizzle over the white wine and season to taste
  7. Cover loosely with some tin foil and bake in the oven for 60 minutes.
  8. Use a temperature probe to check the fish is cooked - it should be 72°C
  9. Remove from the oven and allow the fish to rest
  10. If you prefer, remove the head, fins, gills, and tail before serving and gently peel off the skin
  11. Garnish with the grated lemon and orange rind and a sprinkle of fresh herbs, such as dill or thyme
  12. Cut into individual portions and enjoy
