    1 tbsp Olive Oil

    1x 500g pack Penne Pasta

    1x onion - peeled and chopped

    2x 145g tins Tuna Chunks in Brine - drained

    500g Chopped Tomatoes

    Creamy Butter Salted - 2 tbsp

    Plain Flour - 2 tbsp

    500ml Semi Skimmed Milk

    360g Mild British Cheddar Cheese – grated

    Method

    Pre-heat the oven 180°C/350°F/Gas Mark 4.

    Bring a large saucepan of water to the boil.

    Season with salt and add the olive oil.

    Add the pasta and the onion.

    Cook the pasta as per pack instructions, then drain.

    Mix the tuna with the pasta and onion.

    Add the chopped tomatoes and a pinch of black pepper. Stir to mix.

    Put the mixture into a large baking dish.

    Make the cheese sauce by melting the butter in a saucepan.

    Add the flour and stir well. Gradually add the milk and whisk until there are no lumps.

    On a gentle heat, bring the sauce to the boil, stirring all the time until thick.

    Add 260g of the grated cheese, season with salt and pepper and stir until the cheese has melted. Then pour the cheese sauce over the pasta.

    Sprinkle over the remaining cheese Bake in a pre-heated oven for 40 minutes.
