Clootie Inspired Scottish Steamed Pudding

This dessert doesn't contain suet but still has the delicious fruit and spice taste.

Ingredients
- 150g Self-Raising Flour
- 150g Caster Sugar
- 150g Perfect for Baking Spread
- 2 x large Scottish Eggs
- 100g Mixed Dried Fruit
- 30ml Scottish Milk
- 2 x heaped tsp Mixed Spice
- 1 x heaped tsp Ground Ginger
- 1 x tsp Vanilla Essence
Method
- Put all the ingredients apart from the mixed fruit into a blender and blend to a smooth batter.
- Put into a bowl and fold through the dried fruit.
- Grease a 750ml pudding basin.
- Transfer the mixture to the basin.
- Cover securely with some buttered baking parchment and them some foil.
- Put a sauce into a large pan and fill a third with water, bring to the boil.
- Place the basin in the pan, cover and steam for 2 hours.
- Check the water every 20 mins and top up with some more boiling water when required.
- Carefully remove the foil and paper, turn upside down on a plate and serve with custard or cream.
