Stuffed Dates

A decadent and healthy snack.

Ingredients

  • 12 Medjool Dates, stoned
  • 20g Pistachios, shelled and roughly chopped
  • 1 heaped tsp Almond Butter
  • 50g White Chocolate Chips
  • 1 tsp Coconut Oil
  • 20g Pomegranate Seeds
  • 1 heaped tsp Honey

  

Method

  1. Remove the stones from the dates by cutting a slit down one side of the date with a very sharp knife and take the stone out with your fingers.
  2. Using half of the pistachios mix well with the almond butter.
  3. Fill the dates by opening them up carefully at the slit and using a small teaspoon to place a blob of filling in each and then close them again, placing them cut side down on some baking paper.
  4. Microwave the white chocolate chips with the coconut oil, in 10 second bursts until molten, stirring at each interval.
  5. Take a small plate and spread the honey all over with a teaspoon. Take the stuffed dates and place on the honey base. Drizzle the chocolate over each date using a teaspoon or piping bag and sprinkle with pistachio pieces and pomegranate seeds.
