Masala Potatoes

Potatoes with a twist.

Ingredients
- 600g Maris Piper Potatoes
- 1 Large Red Onion
- 2 Green Finger Chillies
- 3 Cloves Garlic
- 15g Fresh Ginger, peeled
- 1 heaped tsp Garam Masala
- 1 heaped tsp Ground Cumin
- 30ml Olive Oil
- 15g Fresh Coriander
- Sea Salt and Black Pepper
Method
- Peel the potatoes and chop into medium chunks.
- Put in a pan and cover with cold water, season with salt, bring to the boil, cover and cook for 5-6 minutes, until just tender. Drain and dry the potatoes in the pan then put to one side.
- Peel and finely chop the onion and garlic.
- Finely slice the chillies and finely chop the ginger.
- Heat the oil in a large frying pan or wok. Add the onions, garlic, ginger and chillies then cook on a low light until the onions are softened but not browned.
- Add the potatoes and gently mash a little or chop smaller. Season with plenty of black pepper and cook for about 8 minutes until heated through.
- Chop the coriander, scatter over the potatoes and serve.
