Masala Potatoes

Potatoes with a twist.

Ingredients

  • 600g Maris Piper Potatoes
  • 1 Large Red Onion
  • 2 Green Finger Chillies
  • 3 Cloves Garlic
  • 15g Fresh Ginger, peeled
  • 1 heaped tsp Garam Masala
  • 1 heaped tsp Ground Cumin
  • 30ml Olive Oil
  • 15g Fresh Coriander
  • Sea Salt and Black Pepper  

  

Method

  1. Peel the potatoes and chop into medium chunks.
  2. Put in a pan and cover with cold water, season with salt, bring to the boil, cover and cook for 5-6 minutes, until just tender. Drain and dry the potatoes in the pan then put to one side.
  3. Peel and finely chop the onion and garlic.
  4. Finely slice the chillies and finely chop the ginger.
  5. Heat the oil in a large frying pan or wok. Add the onions, garlic, ginger and chillies then cook on a low light until the onions are softened but not browned.
  6. Add the potatoes and gently mash a little or chop smaller. Season with plenty of black pepper and cook for about 8 minutes until heated through.
  7. Chop the coriander, scatter over the potatoes and serve.
