Pistachio Pesto

A vibrant twist on a classic! Blending pistachios and fresh basil for a nutty, rich, and irresistibly smooth sauce perfect for tossing with pasta or drizzling over roasted veggies.

Ingredients

  • 150ml Extra Virgin Olive Oil
  • 90g Shelled Pistachios
  • 60g Parmesan (Freshly Grated)
  • 40g Fresh Basil
  • 1 Garlic Clove
  • Pinch of Salt
  • Pinch of Pepper

Method

  1. Place all the ingredients into a food processor and blitz until smooth.  
  2. Store in an airtight container topped with an additional drizzle of olive oil to keep fresh.
