Spicy Fish Nuggets

Add a spicy twist to the humble fish nugget with this gorgeous recipe.

Ingredients

  • 260g pack Cod Loins
  • 100g Fresh Breadcrumbs
  • 2 flat tsp Dried Parsley
  • 1 tsp Paprika
  • 1 Medium Egg
  • 15g Plain Flour
  • 10ml White Wine Vinegar
  • 35ml Peri Peri Sauce
  • ½ tsp Ginger Pureé
  • ½ tsp Garlic Granules
  • Sea Salt and White Pepper
  • Sweet Chilli Sauce/Soy Sauce to serve

  

Method

  1. Put the breadcrumbs, paprika and parsley in a bowl and mix well.
  2. In another bowl, mix the vinegar, peri peri sauce, ginger and garlic granules together.
  3. Whisk the egg and put in another bowl.
  4. Put the flour in a bowl and season with salt and pepper.
  5. Remove the cod from the wrapper and pat dry with some kitchen paper, then cut into strips.
  6. Put the cod in the peri peri sauce and gently coat.
  7. Then, gently toss in the seasoned flour, then the egg wash and finely the breadcrumbs.
  8. To cook in an air fryer, spray the tray then cook in a single layer at 180°C for 10-12 minutes, turning halfway through.
  9. To oven bake, cook at 200°C in a single layer for 15-18 minutes.
  10. Serve alongside the sweet chilli sauce or soy sauce.
