Cauliflower Cheese

Ingredients
- 1 large Cauliflower
- 50g Plain Flour
- 500ml Whole Milk
- 50g Butter
- 125g Mature Cheddar Cheese
- 1 tsp Dijon Mustard
- ½ tsp Paprika
- Salt and White Pepper
Method
- Pre-heat the oven to 200°C/Gas Mark 6.
- Cut the cauliflower into quarters. Boil in some salted water for 5 minutes, then drain well and put into an ovenproof dish.
- Melt the butter in a medium saucepan, add all of the flour and cook on a light heat for a minute. Then, add the milk slowly and whisk as you bring to the boil and cook for a couple of minutes on a light heat. Add the mustard and 100g of the grated cheese. Season with a little salt and some white pepper.
- Pour the sauce over the cauliflower, sprinkle with the extra cheese and the paprika. Bake in the oven for 20 minutes.
