Broccoli Parmesan Crisps

Ingredients
- 360g Broccoli
- 90g Parmesan Cheese, finely grated
- 1tsp Garlic Granules
- Pinch of Sea Salt
- 2tbsp Crème Fraiche
- 1tsp Sriracha
Method
- Preheat the oven to 220c/200c fan gas mark 6.
- Break up the florets from the stem and slice them thinly
- Bring a saucepan of salted water to the boil and blanche the broccoli for 1 minute, drain well in a colander.
- Line a baking tray with baking parchment, sprinkle two thirds of the Parmesan over the papercreating a thin layer, add the broccoli leaving a little space between each floret. Press the broccoliwith a potato masher gently but firmly, to flatten just a little. Sprinkle over the salt, garlic granules & remaining Parmesan.
- Bake for 25-30 minutes, allow it to cool slightly before breaking into pieces and arrange on a plate.
- Take a small bowl and add the crème fraiche, swirl though the sriracha and serve.
