Broccoli Parmesan Crisps

Ingredients  

  • 360g Broccoli
  • 90g Parmesan Cheese, finely grated
  • 1tsp Garlic Granules
  • Pinch of Sea Salt
  • 2tbsp Crème Fraiche
  • 1tsp Sriracha

Method

  1. Preheat the oven to 220c/200c fan gas mark 6.
  2. Break up the florets from the stem and slice them thinly
  3. Bring a saucepan of salted water to the boil and blanche the broccoli for 1 minute, drain well in a colander.
  4. Line a baking tray with baking parchment, sprinkle two thirds of the Parmesan over the papercreating a thin layer, add the broccoli leaving a little space between each floret. Press the broccoliwith a potato masher gently but firmly, to flatten just a little. Sprinkle over the salt, garlic granules & remaining Parmesan.
  5. Bake for 25-30 minutes, allow it to cool slightly before breaking into pieces and arrange on a plate.
  6. Take a small bowl and add the crème fraiche, swirl though the sriracha and serve.
