Spaghetti Carbonara

This quick and easy family favourite will be a sure fire hit with all the family.

- 200g Smoked Streaky Bacon, diced
- 6 Egg Yolks
- 40g Parmesan
- 1 tsp Cracked Black Pepper
- 1 Garlic Clove, finely diced
- 150g Chestnut Mushrooms, finely sliced
- 400g Fresh Egg Pasta
- 60g Parmesan Shavings
- Parsley to garnish
Method
- Fry the bacon until crispy, adding the mushrooms and garlic for the last three minutes.
- Place the spaghetti in a pan of boiling salted water and cook for 4-5 minutes.
- Whilst the pasta is cooking, place all the yolks in a bowl and stir in the grated parmesan.
- Drain the pasta into a colander, reserving some of the hot pasta water and transfer back to the pan and gently stir in the egg yolks, until all the pasta is coated.
- Add the pasta water a bit at a time, until your sauce is glossy but fairly thick (around 4 tbsp should be just right), add the bacon, mushrooms and cracked black pepper and stir thoroughly.
- Serve in bowls and garnish with extra black pepper, parsley and parmesan shavings.
