Ingredients

  • 1 Pack Honey and Mustard Pretzel Thins
  • 4 Burger Buns
  • 2 Chicken Breasts, Cut Into Fillets
  • 4 Iceberg Lettuce Leaves
  • 1 tsp of Dijon Mustard
  • 1 tbsp of Lemon Juice
  • 3 tbsps of Mayonnaise

Method

  1. Place the bag of honey and mustard pretzel thins in the blender or whilst they are still in the packet, use a rolling pin to smash the pieces up into fine pieces so the chicken can be coated in them.
  2. Cut your chicken breasts into thin strips, you want to get 6 strips from each breast for 4 burgers.
  3. Get out two bowls, put the pretzel pieces in one and a whisked egg in the other. (You can skip the egg it’ll still work!)
  4. Coat each chicken strip in egg wash by dipping it in the bowl. Then place the strip in the pretzel mix and completely coat the chicken.
  5. Place in an air fryer on 190°C for 15 minutes, or alternatively place on a baking tray, drizzle them with oil and bake for 30 minutes on 200°C.
  6. Meanwhile, toast your burger buns by frying them face down in butter for a few minutes.
  7. Make a honey mustard mayo with the mayonnaise, mustard, a tablespoon of lemon juice and the honey.
  8. Load the buns with lettuce and any other salad you’re using, a tablespoon of the mayo and the chicken strips.
  9. Served with a potato salad which is just new potatoes cooked and coated in the same honey mustard mayo from the burgers and topped with fresh red onion.
