Chicken Parmesan

Ingredients
- 3 Chicken Breasts
- 120g Plain Flour
- 2 Eggs, beaten
- 100g Parmesan, grated
- 80g Stale Bread
- 1 tsp Garlic Salt
- Pinch Salt
- Pinch Pepper
- 300g Tomato Sauce
- 200g Mozzarella
- Small bunch of Fresh Basil
- Vegetable Oil, for frying
Method
- Slice each chicken breast in half to create 6 thin chicken breast fillets.
- Make the breadcrumbs by placing the stale bread into a food processor and blitz into breadcrumbs.
- Add the garlic salt, salt and pepper to the flour.
- Add ¾ of the grated parmesan to the breadcrumbs and blitz again.
- Coat the chicken fillets in the flour, then the beaten egg and finally the breadcrumbs.
- Pre-heat the oven to 200°C/180°C Fan/Gas Mark 6.
- Heat 1-2cm of oil in a deep frying pan.
- When the oil is hot, fry the chicken for about 5 minutes on each side until the breadcrumbs are golden and the chicken is cooked through.
- Slice the mozzarella into 6 slices and warm the tomato sauce.
- Spoon some of the sauce over each piece of chicken and top with a slice of mozzarella.
- Bake for 5-10 minutes until the cheese has melted.
- Top with torn fresh basil and serve.
