Chicken Parmesan

Ingredients

  • 3 Chicken Breasts
  • 120g Plain Flour
  • 2 Eggs, beaten
  • 100g Parmesan, grated  
  • 80g Stale Bread
  • 1 tsp Garlic Salt
  • Pinch Salt
  • Pinch Pepper
  • 300g Tomato Sauce
  • 200g Mozzarella
  • Small bunch of Fresh Basil
  • Vegetable Oil, for frying  

  

Method

  1. Slice each chicken breast in half to create 6 thin chicken breast fillets.
  2. Make the breadcrumbs by placing the stale bread into a food processor and blitz into breadcrumbs.
  3. Add the garlic salt, salt and pepper to the flour.
  4. Add ¾ of the grated parmesan to the breadcrumbs and blitz again.
  5. Coat the chicken fillets in the flour, then the beaten egg and finally the breadcrumbs.
  6. Pre-heat the oven to 200°C/180°C Fan/Gas Mark 6.
  7. Heat 1-2cm of oil in a deep frying pan.
  8. When the oil is hot, fry the chicken for about 5 minutes on each side until the breadcrumbs are golden and the chicken is cooked through.
  9. Slice the mozzarella into 6 slices and warm the tomato sauce.
  10. Spoon some of the sauce over each piece of chicken and top with a slice of mozzarella.
  11. Bake for 5-10 minutes until the cheese has melted.
  12. Top with torn fresh basil and serve.
