Caprese Salad

Ingredients
For the balsamic glaze:
- 120ml Balsamic Vinegar
- 20g Caster Sugar
For the Caprese salad:
- 2 x 125g Mozzarella Balls, sliced
- 500g Large Vine Ripened Tomatoes, sliced
- Small bunch of Fresh Basil
- 2 tbsp Extra Virgin Olive Oil
- Pinch of Salt
- Pinch of Pepper
Method
- Make the balsamic glaze by placing the ingredients in a saucepan, simmer for 5 minutes, then leave to cool.
- Arrange the mozzarella and tomatoes on a plate along with some torn fresh basil.
- Drizzle over the extra virgin olive oil and balsamic vinegar glaze, season with the salt and pepper then serve.
- Save any remaining balsamic glaze for future salads.
