Caprese Salad

Ingredients

For the balsamic glaze:

  • 120ml Balsamic Vinegar
  • 20g Caster Sugar

For the Caprese salad:

  • 2 x 125g Mozzarella Balls, sliced
  • 500g Large Vine Ripened Tomatoes, sliced
  • Small bunch of Fresh Basil
  • 2 tbsp Extra Virgin Olive Oil
  • Pinch of Salt
  • Pinch of Pepper

  

Method

  1. Make the balsamic glaze by placing the ingredients in a saucepan, simmer for 5 minutes, then leave to cool.
  2. Arrange the mozzarella and tomatoes on a plate along with some torn fresh basil.
  3. Drizzle over the extra virgin olive oil and balsamic vinegar glaze, season with the salt and pepper then serve.
  4. Save any remaining balsamic glaze for future salads.
