Cajun Salmon

Ingredients

  • 1 x 280g pack fresh salmon fillets
  • 1 x Lime
  • 2 x tsp Cajun seasoning
  • 1 x 300g pack Worldwide Food Basmati rice
  • 1 x Green pepper
  • 5g Fresh coriander

Method

  1. Juice half the lime and brush over the salmon fillets.
  2. Sprinkle 1 x tsp Cajun seasoning over each salmon fillet.
  3. Chop the pepper into medium size chunks.
  4. Heat the fryer to 180°C.
  5. Put the salmon fillets on the fry tray and the pepper chunks around.
  6. Close the fry basket.
  7. Cook for 8 mins.
  8. Microwave the rice for 2 mins – as directions on the pack.
  9. Serve the salmon on a bed of rice with the peppers – with a lime wedge and some fresh chopped coriander.
