Spiced Red Cabbage with Apples

Quick red cabbage recipe with red onion, garlic, cinnamon and apple.

Ingredients

  • 650g Red Cabbage
  • 2 Bramley Cooking Apples
  • 1 large Red Onion
  • 35ml Rapeseed Oil
  • 2 cloves Garlic
  • 75ml Vegan Red Wine  
  • 200ml Water
  • 30g Demerara Sugar
  • ½ tsp Ground Cinnamon
  • Sea Salt and White Pepper

Method

  1. Peel and halve the red onion and thinly slice.
  2. Peel and mince the garlic.
  3. In a large saucepan, sauté the red onion and garlic in the oil for 5 minutes on a low heat.
  4. Thinly slice the red cabbage and add to the pan.
  5. Add the water, wine, sugar and cinnamon, and season with some salt and pepper.
  6. Peel and core the apples and dice – add to the pan.
  7. Bring to the boil, then cover and cook on a medium heat for 20 minutes, stirring as you cook.
