S'mores Winter Mule

A fun and festive twist on a traditional mule.

Ingredients  

  • 50ml Stefanoff vodka
  • 50ml Ballycastle s’mores
  • 5 Giant marshmallows
  • 1cm Cube fresh ginger, grated
  • 2 tbsp Granulated brown sugar
  • 300ml Soda water
  • 10 Ice cubes

Method

  1. Preheat the oven to 180°C/160°F.
  2. Toast 3 marshmallows in the oven on a tray for a few minutes until they are brown and melted inside and allow these to cool, reserving 2 for decoration.
  3. Place them in a heavy bottomed pan, adding brown sugar, ginger and 70ml water. Bring this to a gentle boil and stir frequently.
  4. Turn down to simmer until the marshmallows have dissolved and you are left with a smooth ginger syrup, cover this with cling film and allow to cool.
  5. Once cooled, the syrup should have the consistency of runny honey.
  6. Fill the glasses with ice, add the syrup, the alcohol and top with soda.
  7. Take a cocktail pick and stick a giant marshmallow on the end to put on the rim of each glass. Stir the drink before drinking to allow the ginger syrup to come through.
