Simple, comforting and delicious – perfect on its own, as a side or with a few oven chips.
1 large Cauliflower
50g Plain Flour
500ml Whole Milk
50g Butter
125g Mature Cheddar Cheese
1 tsp Dijon Mustard
½ tsp Paprika
Salt and White Pepper
Pre-heat the oven to 200°C/Gas Mark 6.
Cut the cauliflower into quarters. Boil in some salted water for 5 minutes, then drain well and put into an ovenproof dish.
Melt the butter in a medium saucepan, add all of the flour and cook on a light heat for a minute. Then, add the milk slowly and whisk as you bring to the boil and cook for a couple of minutes on a light heat. Add the mustard and 100g of the grated cheese. Season with a little salt and some white pepper.
Pour the sauce over the cauliflower, sprinkle with the extra cheese and the paprika. Bake in the oven for 20 minutes.
