Scottish Fruit Oatcakes

Recipe

Golden, crunchy oat biscuits with sweet mixed fruit and a toasty, nutty flavour.

Ingredients

  • 225g Brochan Porridge Oats
  • 225g Mixed dried fruit
  • 225g Plain flour
  • 225g Light brown soft sugar
  • 140g Salted Scottish butter
  • 90ml Golden syrup
  • 30ml Boiling water
  • 1 x tsp Bi carb soda

  

Method

  1. Preheat the oven to 170c/330f/gas 3.
  2. Cut the butter into small chunks.
  3. Put into a small saucepan along with the sugar and the golden syrup.
  4. Melt over a low light – then put to one side.
  5. Pour the boiling water over the bi carb and then pour into the pan – mix well .
  6. Put the flour, oats and mixed fruit into a large bowl and mix together.
  7. Pour over the sugar mixture and stir until combined.
  8. Line some baking sheets with non-stick paper.
  9. Take out dessert spoons of the dough – about 65g – and put onto the baking sheets – press down to make a circle – leave space between them for them to spread out while baking.
  10. Bake for 15 mins – till golden – allow to cool on the trays for 10 mins before gently putting on a wire rack to cool completely – they will be a bit on the soft side.
