Scottish Fruit Oatcakes

Golden, crunchy oat biscuits with sweet mixed fruit and a toasty, nutty flavour.

Ingredients
- 225g Brochan Porridge Oats
- 225g Mixed dried fruit
- 225g Plain flour
- 225g Light brown soft sugar
- 140g Salted Scottish butter
- 90ml Golden syrup
- 30ml Boiling water
- 1 x tsp Bi carb soda
Method
- Preheat the oven to 170c/330f/gas 3.
- Cut the butter into small chunks.
- Put into a small saucepan along with the sugar and the golden syrup.
- Melt over a low light – then put to one side.
- Pour the boiling water over the bi carb and then pour into the pan – mix well .
- Put the flour, oats and mixed fruit into a large bowl and mix together.
- Pour over the sugar mixture and stir until combined.
- Line some baking sheets with non-stick paper.
- Take out dessert spoons of the dough – about 65g – and put onto the baking sheets – press down to make a circle – leave space between them for them to spread out while baking.
- Bake for 15 mins – till golden – allow to cool on the trays for 10 mins before gently putting on a wire rack to cool completely – they will be a bit on the soft side.
