Loaded Chilli Nachos

These loaded nachos are perfect for sharing (or not!)

Ingredients
- 1 Nachos Kit
- 250g Lean Mince
- 1 medium Red Onion
- 2 Garlic Cloves
- 1 Green Pepper
- 2 level tsp Chilli Powder
- 1 tsp Paprika
- 1 tsp Dried Oregano
- 300ml Passata
- 1 tin Black Beans, drained
- 25ml Olive Oil
- Sea Salt and Black Pepper
To serve
- Sour Cream & Onion Dip
- 1 Avocado, sliced
- Cheddar Cheese, grated
- 1 Red Chilli, finely sliced
Method
- Peel and finely chop the onion.
- Peel and mince the garlic.
- In a frying pan, sauté the onions and garlic in a little oil on a low heat, until softened.
- In the meantime, finely chop the green pepper, discarding any seeds and white pith.
- Add the pepper and mince to the pan, stirring until the meat is browned.
- Add the chilli powder, paprika, oregano, passata and season with salt and pepper.
- Cover and simmer for 20 minutes.
- Add the beans to the pan and cook for another 15 minutes.
- Turn out the nachos onto a plate – top with salsa and cover with the chilli sauce.
- Add slices of avocado, some grated cheese, sour cream and finish with the red chilli slices.
