Air Fryer Cinnamon and Raisin Pancakes

Ingredients
- 220g Self Raising Flour
- 50g Caster Sugar
- ½ tsp Baking Powder
- ½ tsp Ground Cinnamon
- 200ml Milk
- 2 Medium Eggs
- 2 tbsp (30g) melted Butter
- 90g Raisins
To Serve:
- Maple Syrup
- Yoghurt
- Raisins
- Ground Cinnamon
Equipment:
- Air Fryer
- Silicone/paper liner for air fryer or greaseproof paper to line the base
- 8.5cm crumpet rings greased with butter for neater pancakes (optional)
Method
- Place the flour, caster sugar, baking powder and ground cinnamon into a mixing bowl and stir to combine.
- In a separate bowl, whisk together the milk and eggs.
- Gradually mix the wet ingredients into the dry until smooth.
- Finally, stir the melted butter and raisins through the pancake mix.
- Set the air fryer to 180C and place the crumpet rings into your lined tray.
- Spoon 2-3 tablespoons of pancake batter into your lined tray, ensuring the pancakes have some space between them. If using a crumpet ring, simply spoon 2-3 tablespoons of pancake batter into each ring.
- Cook for 8-10 minutes, until almost cooked, then flip and cook for another 2-4 minutes to ensure the base is cooked.
- Continue in batches until all of the batter is cooked.
- Serve the pancakes stacked, and top with the yoghurt, raisins, maple syrup and a sprinkle of ground cinnamon.
