Air Fryer Cinnamon and Raisin Pancakes

Pancakes have never been easier with this tasty air fryer recipe.

Ingredients

  • 220g Self Raising Flour
  • 50g Caster Sugar
  • ½ tsp Baking Powder
  • ½ tsp Ground Cinnamon   
  • 200ml Milk
  • 2 Medium Eggs
  • 2 tbsp (30g) melted Butter
  • 90g Raisins

To Serve:

  • Maple Syrup
  • Yoghurt
  • Raisins
  • Ground Cinnamon

Equipment:

  • Air Fryer
  • Silicone/paper liner for air fryer or greaseproof paper to line the base
  • 8.5cm crumpet rings greased with butter for neater pancakes (optional)

  

Method

  1. Place the flour, caster sugar, baking powder and ground cinnamon into a mixing bowl and stir to combine.
  2. In a separate bowl, whisk together the milk and eggs.
  3. Gradually mix the wet ingredients into the dry until smooth.
  4. Finally, stir the melted butter and raisins through the pancake mix.
  5. Set the air fryer to 180C and place the crumpet rings into your lined tray.
  6. Spoon 2-3 tablespoons of pancake batter into your lined tray, ensuring the pancakes have some space between them. If using a crumpet ring, simply spoon 2-3 tablespoons of pancake batter into each ring.
  7. Cook for 8-10 minutes, until almost cooked, then flip and cook for another 2-4 minutes to ensure the base is cooked.
  8. Continue in batches until all of the batter is cooked.
  9. Serve the pancakes stacked, and top with the yoghurt, raisins, maple syrup and a sprinkle of ground cinnamon.
