Crispy Fried Pickles

Ingredients
- 190g Crinkle Cut or Whole Gherkins, drained
- 75g Plain Flour
- 20g Cornflour
- 1 flat tsp Baking Powder
- 1 tsp Paprika
- 125ml Tonic Water, chilled
- Salt and White Pepper
- Sunflower Oil, to fry
For the Garlic Yogurt Dip:
- 150g Greek Yogurt
- 25ml White Wine Vinegar
- 1 tsp Garlic Granules
- 1 tsp Dried Parsley
- ½ tsp Dried Oregano
- 1 tsp Honey
Method
- Mix all the ingredients for the dip together and put to one side.
- Heat some sunflower oil to 180°C in a large pan.
- If using the whole gherkins – slice into rounds.
- In a large bowl mix together the flours, baking powder and paprika and season with some salt and pepper.
- Add the tonic water and mix in with a fork.
- Pat the gherkin rounds with a paper towel.
- Dip them in the batter until well coated and fry in batches until golden brown.
- Keep the cooked ones warm while you fry the rest.
- Serve alongside the garlic yogurt dip.
