Vegan & Vegetarian Board

Lay on a plant-based party pleaser jam-packed with fresh vegetables, butternut squash, fruits and dips.

Ingredients

  • 200g Butternut squash, tomato & basil falafel
  • 200g Houmous
  • 150g Guacamole
  • 150g Chunky salsa
  • 100g Multigrain rice cakes
  • 200g Plant based cheddar slices
  • 100g Vegan cheddar block - sliced into chunks
  • 100g Brazil nuts
  • 3 Sticks of celery
  • 2 Pink lady apples
  • 100g Blueberries
  • 2 Large carrots
  • 6 Radishes

Method

  1. Heat the oven to 180 / 160c fan / Gas mark 4.
  2. Decant the dips into a bowl each and place on a platter.
  3. Cut the celery into sticks, slice the apple, peel the carrots and slice into Batons.
  4. Slice the radishes into thin rounds.
  5. Cook the falafels on a tray for 5-10 minutes.
  6. Whilst the falafel are warming arrange the rice cakes, fruit, veg, cheese, nuts and dips on the platter and garnish with herbs & add the warm falafel.
