Homemade Vegan Mayonnaise

Ingredients

  • 120ml Soya Milk
  • 200ml Vegetable Oil
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Dijon Mustard
  • Salt and Pepper, to taste

  

Method

  1. Pour the soya milk into the bowl of a food processor and mix for 1 minute.
  2. With the food processor running very slowly, drizzle in the oil in a thin stream.
  3. Remove the lid of the food processor, scrape down the sides of the bowl and add the apple cider vinegar and mustard. Blend for a further 2 minutes, until thickened.
  4. Season to taste.
  5. Store in a jar in the fridge for up to 2 weeks.
