Whole Broccoli Pesto Pasta

Use all of the broccoli from your ALDI Surprise Bag with this delicious, herby, light pasta recipe.

Ingredients

  • Large handful herbs - think basil, parsley or coriander
  • 1 clove Garlic, peeled
  • 1 Broccoli stalk, roughly chopped
  • ½ a Broccoli head, broken into small florets
  • 35g Nuts - think pine nuts, almonds, pistachio or cashew
  • 50g Parmesan cheese, grated, or nutritional yeast to make it vegan
  • 200g of dry Pasta
  • Salt
  • Olive oil

  

Method

  1. Boil a pot of water, add salt and cook your pasta on as directed on the packet.
  2. In a food processor, pulse broccoli pieces until they’re broken up into pieces the size of corn kernels. Add herbs, garlic, nuts and cheese, and pulse into a thick paste is formed.
  3. Add small amounts of salt until you reach a taste you like, then take the same approach with olive oil until you reach your preferred consistency.
  4. When your pasta has 4 minutes left, add your broccoli florets. Drain your pasta and broccoli.
  5. Add your pesto with a splash of pasta water, mix it all together and serve.
