Turkey Burrito

Build your own easy turkey burrito with all the toppings for a quick weeknight dinner solution.

Ingredients
- 500g Turkey Mince
- 8x Wholemeal Wraps
- 2x 125g Boil In The Bag Rice
- 1x Sweet Gem Lettuce
- 1x Large Red Onion
- 1x Red Pepper
- 2x Green Chilli
- 15g Cut Coriander
- 30ml Vegetable Oil
- Black Pepper
- Salt
Method
- Cook the rice as directions on the pack
- Peel the onion and finely chop
- Chop the red pepper finely – discard any white pith and seeds
- Heat the oil in a large frying pan – saute the onion and red pepper for a couple of mins – then add the turkey mince and brown
- Cook on a low light for 20mins
- Chop the chillies finely – keep the seeds if you want a hotter dish – mix in with the mince and cook a further 5 mins
- Heat the wraps in the microwave – or griddle them
- Divide the leaves, rice and mince mix between the wraps and serve.
