Turkey Burrito

Build your own easy turkey burrito with all the toppings for a quick weeknight dinner solution.

Ingredients

  • 500g Turkey Mince
  • 8x Wholemeal Wraps
  • 2x 125g Boil In The Bag Rice
  • 1x Sweet Gem Lettuce
  • 1x Large Red Onion
  • 1x Red Pepper
  • 2x Green Chilli
  • 15g Cut Coriander
  • 30ml Vegetable Oil
  • Black Pepper
  • Salt

Method

  1. Cook the rice as directions on the pack
  2. Peel the onion and finely chop
  3. Chop the red pepper finely – discard any white pith and seeds
  4. Heat the oil in a large frying pan – saute the onion and red pepper for a couple of mins – then add the turkey mince and brown
  5. Cook on a low light for 20mins
  6. Chop the chillies finely – keep the seeds if you want a hotter dish – mix in with the mince and cook a further 5 mins
  7. Heat the wraps in the microwave – or griddle them
  8. Divide the leaves, rice and mince mix between the wraps and serve.
