Swede and Onion Au Gratin

Swede, cheddar, rosemary, garlic and onions in one gloriously mouth-watering gratin.

Ingredients
- 700g Swede
- 2 Medium Red Onions
- 2 tsp Dijon Mustard
- 3g Fresh Rosemary, finely chopped
- 300ml Double Cream
- 100g Cheddar Cheese, grated
- 2 Garlic Cloves
- Sea Salt and Black Pepper
Method
- Pre-heat the oven to 200°C/Gas Mark 6.
- Peel the swede, cut in half lengthways and slice thinly.
- Boil in some salted water for 4 minutes and drain.
- Peel, half and thinly slice the red onions.
- Peel and mince the garlic.
- In a bowl, mix the cream, garlic, rosemary and mustard together and season with some black pepper.
- Place half the sliced onions in an ovenproof dish, top with half the swede slices, half the cream mix and half the cheese.
- Repeat with the remaining ingredients.
- Bake in the oven for 45 minutes.
