Ingredients
- 250g of Chicken Mince
- 150ml of Soy Sauce
- 100ml of Honey
- 2 Spring Onions, Chopped
- 1 Head of Broccoli, Cut Into Florets
- 1 Bag of Boil In The Bag Rice Per Person
- 1 tbsp of Chopped Fresh or Ground Ginger
- Chilli Flakes and Sesame Seeds For Serving (Optional)
- Cornstarch
- Olive Oil
Method
- To make the meatballs, combine the chicken mince, 1 tablespoon of soy sauce, 1 teaspoon of fresh garlic, half a teaspoon of fresh ginger or ground ginger, a tablespoon of freshly chopped spring onions and salt and pepper in a bowl. Coat your hands with oil and roll the meat into balls.
- Alternatively, you can buy the Aldi Chicken Meatballs for the same price but there are just 12 in a packet. You can still add these ingredients to each meatball by unrolling them in the mix and rolling them up again.
- Place two tablespoons of cornstarch in a bowl and roll each meatball in it making sure they are coated well. Add a tablespoon of cornstarch to 2 tablespoons of water and set aside for thickening the sauce later.
- Heat some oil in a frying pan and cook on a low/medium heat for 10 minutes - making sure all sides of the meatballs are golden.
- To make the sauce add 150ml of soy sauce, 100ml of honey and 80ml of water to a bowl and mix.
- To the frying pan, add the broccoli florets and cook for 5 minutes. Add the 1 tablespoon of garlic and 1 teaspoon of fresh or ground ginger, option to add chilli flakes if desired. Pour in the sauce and the cornstarch with water mix to thicken it. Cook for 5 minutes until the sauce starts to thicken the add the meatballs, coating them in the sauce.
- Serve the meatballs and sauce over rice with some sliced spring onions and sesame seeds if you have them!
