Sticky Hoisin Sausage Traybake

Ingredients
- 12 Pack Of Chipolata Sausages
- 3 Tbsps Hoisin Sauce
- 1 Large Or 2 Small Sweet Potatoes, Chopped Into Chunks
- 50g Spring Onion, Chopped
- 1 Red Or White Onion, Chopped
- 1 Handful Fresh Coriander, Chopped
- 2 Tbsps Sriracha Sweet And Sour Seasoning
- 250g Chestnut Mushrooms
- 4 Cloves Garlic, Chopped
- Sesame Seeds For Serving
Method
- Preheat your oven to 190 degrees then add your sweet potatoes to a baking tray and place in the oven for 10 minutes whilst you prepare the rest of the vegetables.
- Remove the sweet potato and add the onion, garlic and mushrooms to the tray. (If you have any odd ends of peppers/aubergines, you can add them into this too!) Place the sausages on top and sprinkle the sriracha seasoning over the everything.
- Drizzle with a little hoisin sauce and place in the oven for 30 mins on 190 degrees.
- Remove and add coriander, sesame seeds and if you like them, chilli flakes and serve.
