Sticky Hoisin Sausage Traybake

A delicious vegan bake the whole family will love!

Ingredients  

  • 12 Pack Of Chipolata Sausages
  • 3 Tbsps Hoisin Sauce
  • 1 Large Or 2 Small Sweet Potatoes, Chopped Into Chunks
  • 50g Spring Onion, Chopped
  • 1 Red Or White Onion, Chopped
  • 1 Handful Fresh Coriander, Chopped
  • 2 Tbsps Sriracha Sweet And Sour Seasoning
  • 250g Chestnut Mushrooms
  • 4 Cloves Garlic, Chopped
  • Sesame Seeds For Serving

Method

  1. Preheat your oven to 190 degrees then add your sweet potatoes to a baking tray and place in the oven for 10 minutes whilst you prepare the rest of the vegetables.
  2. Remove the sweet potato and add the onion, garlic and mushrooms to the tray. (If you have any odd ends of peppers/aubergines, you can add them into this too!) Place the sausages on top and sprinkle the sriracha seasoning over the everything.
  3. Drizzle with a little hoisin sauce and place in the oven for 30 mins on 190 degrees.
  4. Remove and add coriander, sesame seeds and if you like them, chilli flakes and serve.
