Spicy Peanut Noodles

This tasty noodle dish will be a hit on those cold winter nights.

Ingredients

For the noodles:

  • 1 pack Ready to Wok Noodles
  • 40g Garden Peas, thawed
  • 100g Broccoli, chopped into pieces
  • 1 tsp Vegetable Oil

For the sauce:

  • 5 tbsp Crunchy Peanut Butter
  • 3 tbsp Soy Sauce
  • 1 tbsp Sriracha
  • 5 tbsp Tomato Sauce
  • 3 tbsp Water
  • 1 Garlic Clove, finely grated
  • Small piece of Fresh Ginger, skin removed and grated

To serve:

  • 15g Coriander, chopped
  • 3 Spring Onions, finely diced
  • ¼   tsp Chilli Flakes, optional
  • 1 tbsp Peanuts, chopped

  

Method

  1. Mix all the sauce ingredients together in a medium-sized bowl.
  2. Blanch the broccoli and the peas for two minutes in boiling water, drain well.
  3. Add the noodles and vegetables to a heated wok, stir for a minute, add the sauce and stir for a few more minutes, until everything is combined. Serve in two bowls and top with coriander, spring onions, chilli flakes and chopped peanuts.
