Spicy Peanut Noodles

This tasty noodle dish will be a hit on those cold winter nights.

Ingredients
For the noodles:
- 1 pack Ready to Wok Noodles
- 40g Garden Peas, thawed
- 100g Broccoli, chopped into pieces
- 1 tsp Vegetable Oil
For the sauce:
- 5 tbsp Crunchy Peanut Butter
- 3 tbsp Soy Sauce
- 1 tbsp Sriracha
- 5 tbsp Tomato Sauce
- 3 tbsp Water
- 1 Garlic Clove, finely grated
- Small piece of Fresh Ginger, skin removed and grated
To serve:
- 15g Coriander, chopped
- 3 Spring Onions, finely diced
- ¼ tsp Chilli Flakes, optional
- 1 tbsp Peanuts, chopped
Method
- Mix all the sauce ingredients together in a medium-sized bowl.
- Blanch the broccoli and the peas for two minutes in boiling water, drain well.
- Add the noodles and vegetables to a heated wok, stir for a minute, add the sauce and stir for a few more minutes, until everything is combined. Serve in two bowls and top with coriander, spring onions, chilli flakes and chopped peanuts.
