Slow Cooker Pulled Pork & Black Bean Chilli

Ingredients

  • 700g Pork Shoulder Steaks
  • 2 Tins of Chopped tomatoes
  • 1 Tin of Black Beans
  • 1 tbsp of tomato Purée
  • 1 Red Pepper and 1 Green Pepper
  • 1 Red Onion
  • 1 tbsp of Hot Sauce (Optional)
  • 125ml of Bbq Sauce
  • 150ml of Beef Stock
  • 2 tbsps of Sugar
  • 1 tsp of Chilli Powder
  • 1/2 tsp of Cumin
  • 1 tbsp of Smoked Paprika

Method

  1. Add the pork shoulder steaks to a slow cooker. Add in all the ingredients stated (except the rice).
  2. Cook on low for 8 hours (overnight is best).
  3. After 8-10 hours shred the pork in the slow cooker and give it a good mix.
  4. Serve with rice. Tortilla chips and sour cream go lovely with it too!
