This popular Scottish dish is delicious & easy to make, a perfect meal for all the family.

Ingredients
- 40ml Vegetable Oil
- 1 x Brown Onion, finely chopped
- ½ Swede , peeled and cut into 2cm cubes
- 3 x Carrots , peeled and cut into 2cm cubes
- 1 x Celery stick, finely chopped
- 500g Lorne Sausage, cubed
- 700g Potatoes, peeled and cut in to 3cm cubes
- 500ml Beef Stock
- 1 x Chopped tinned Tomatoes
Method
- Heat the vegetable oil in a medium sized saucepan.
- Add the onion and fry for 10 minutes over a low-medium heat until softened.
- Add the Lorne Sausage & cook until browned.
- Add the swede, carrot and celery and fry for 5 minutes.
- Add the chopped tomatoes and stir in the potatoes.
- Add the stock and season generously, bring to the boil, then turn the heat down to a simmer.
- Cook covered for 1 hr 30 minutes or until the vegetables have softened and the potatoes have broken down completely.
