Recipe

This popular Scottish dish is delicious & easy to make, a perfect meal for all the family.

Ingredients

  • 40ml Vegetable Oil
  • 1 x Brown Onion, finely chopped
  • ½ Swede , peeled and cut into 2cm cubes
  • 3 x Carrots , peeled and cut into 2cm cubes
  • 1 x Celery stick, finely chopped
  • 500g Lorne Sausage, cubed
  • 700g Potatoes, peeled and cut in to 3cm cubes
  • 500ml Beef Stock
  • 1 x Chopped tinned Tomatoes

  

Method

  1. Heat the vegetable oil in a medium sized saucepan.
  2. Add the onion and fry for 10 minutes over a low-medium heat until softened.
  3. Add the Lorne Sausage & cook until browned.
  4. Add the swede, carrot and celery and fry for 5 minutes.
  5. Add the chopped tomatoes and stir in the potatoes.
  6. Add the stock and season generously, bring to the boil, then turn the heat down to a simmer.
  7. Cook covered for 1 hr 30 minutes or until the vegetables have softened and the potatoes have broken down completely.
