Savoury Masala French Toast

Ingredients
- 2 slices soft White Farmhouse Loaf
- 2 large Eggs
- 680ml Semi-Skimmed Milk
- 50g Red Onion
- 5g Green Chilli
- 100g Cherry Tomatoes
- 7g Fresh Coriander
- ½ tsp Curry Powder
- ½ tsp Turmeric
- Sea Salt and Black Pepper
- 25ml Sunflower Oil
- 25g Salted Butter
- Sriracha Sauce, to serve
Method
- Crack the eggs in a bowl and whisk with the milk.
- Finely dice the red onion and chilli and add to the bowl, along with the curry powder, turmeric, salt and pepper.
- Roughly chop the coriander and add this to the bowl and mix well.
- Cut the cherry tomatoes in half.
- Dip the bread slices into the egg mixture – coating both sides.
- Push the tomatoes into the bread on both sides.
- Heat the oil and butter in a large frying pan and fry the bread for a couple of minutes on each side until golden brown.
- Serve alongside some sriracha sauce.
