Savoury Hong Kong-Style French Toast

A savoury version of Hong Kong French toast with gooey cheese and Mighty Yeast Extract.

Ingredients
- 6 Thick Slices of White Bread
- 130g Grated Mozzarella
- 130g Cheddar
- 40g Mighty Yeast Extract (Or Marmite)
- 60g Unsalted Butter, At Room Temperature
- 6 Eggs
- Bunch of Chives
Method
- Preheat your oven to fan 180°C.
- Grate the Cheddar cheese and finely slice the chives.
- Spread the butter and marmite on both sides of two slices of bread, and on one side of the remaining four slices.
- Take a slice that has only been buttered on one side, place it butter-side up, add one-quarter of the grated cheeses onto it and top with a slice of bread that has been buttered on both sides. Top with more cheese and place a slice of bread that has only been buttered on one side. Make two sandwiches like this.
- Crack four eggs into a shallow dish, season with salt and pepper, and add the chives. Whisk together until thoroughly combined. Dunk the sandwich in the egg mixture until all sides are coated.
- Drizzle 4 tbsp of oil into a frying pan so that the bottom is covered, place over medium-low heat. Once hot, add the sandwiches in, cook on all sides until golden and the cheese has melted, 5-7 mins.
