Sausage Alfredo with Bacon Breadcrumbs

A Christmas dish that will soon become a family tradition.

Ingredients

  • Sausage Meat From 4 Chipolatas
  • 4 Slices of Bacon and 1 More For The Breadcrumbs
  • 150ml of Cream
  • 4 Cloves of Garlic
  • 500g of Lasagne Sheets
  • 1 Onion
  • 2 Springs of Rosemary
  • 40g of Grated Grana Padano
  • 150ml of Chicken Stock
  • 1 tsp of Fresh or Dried Thyme
  • Pepper
  • Salt

Method

  1. To make Christmas shapes out of the lasagne sheets, put them in a pan of boiling water for 5 minutes to soften. Be sure to put them in one at a time not in a pile all at once or they’ll stick together. After 5 minutes, put them under cold water to cool them down. Remove them from the pan one at a time and use a stencil or a knife/scissors to cut Christmas shapes into each slice. Stars and Christmas trees are the easiest. When finished, set your shapes aside. (Alternatively, cut the sheets into long strips).
  2. Next, remove the sausage meat from your sausages and add to a pan. Thinly slice your bacon and add that too. Slice an onion, the garlic and add that and fry it all for 5 minutes with the thyme and rosemary.
  3. Add in the cream, stock and pasta shapes and cook on low for 10 minutes. Add in your grana padano and cook for another minute or two.
  4. To make the breadcrumbs, cut the bacon into small bits and rip up a slice of any bread, drizzle with oil and put it in the oven until crispy. Add to a food blender.
  5. Add your pasta to bowls and top with more parmesan and your bacon breadcrumbs.
