Salt and Pepper Halloumi Gyros

Recipe

Salt and pepper seasoned halloumi gyros with crunchy veg, sweet chilli and peri peri mayonnaise.

Ingredients

  • 2 x 225g packs Halloumi
  • 1 x 190g pack Sweet Mini Peppers
  • 1 Large Red Onion
  • 1 x 35g pack Salt and Pepper Seasoning
  • 1 tsp Paprika
  • ½ tsp Chilli Flakes
  • 50ml Squeezy Honey  
  • 4 Seeded Folded Flatbreads
  • 75ml Peri Peri Mayonnaise
  • 25ml Sweet Chilli Sauce
  • 8 Little Gem Lettuce Leaves
  • 50ml Olive Oil

  

Method

  1. In a bowl, mix the mayonnaise and sweet chilli sauce together and put to one side.
  2. Drain the halloumi, cut it into slices and put them in a bowl. Sprinkle over the salt and pepper seasoning, honey, paprika and chilli flakes and leave to marinate for 20 minutes.
  3. Peel and slice the red onion and cut the peppers into strips.
  4. Sauté the peppers and onion in half the olive oil for 5 minutes, then keep warm.
  5. In the same pan, fry the halloumi slices in the remaining oil until sticky and golden.
  6. Warm the flatbreads.
  7. Divide the lettuce leaves, peppers, onion and halloumi between the flatbreads and drizzle over the sauce and serve.
