Salmon and Broccoli Tagliatelle

Flaked Salmon and Broccoli Tagliatelle to fill up the kids when they return to school.

Ingredients
- 300g Tagliatelle
- 1 tbsp Olive Oil
- 1 Onion, Finely Chopped
- 1 Clove Garlic, Finely Chopped
- 300g Soft Cheese
- 1 Lemon, zested and juiced
- Half Broccoli
- 1 pack of 2 cooked marinated Salmon fillets
- Fresh parsley for garnish, finely chopped
Method
- Put the pasta in a pan of boiling water and cook according to the instructions on the packet.
- Drain, reserving 150ml of the pasta water.
- Meanwhile, heat the oil in a large pan over medium heat and cook the onion, broccoli and garlic for 5 minutes until softened.
- Stir in the soft cream cheese and the lemon zest and juice. Bring to a gentle simmer, then stir in the pasta along with the reserved cooking water.
- Stir through the cooked salmon and half the chopped parsley. Divide between bowls and serve with a little seasoning.
