Roasted Gammon Joint with Roasted Kale and Mango Salsa

Roast gammon with roasted kale, honey, apple and mango salsa.

Ingredients

  • 1 bag Kale, washed and patted dry
  • 1 tbsp Olive Oil
  • 1 can Chick Peas, drained
  • 1 tbsp Green Pesto
  • 2 x 350g packs Gammon Steaks
  • 2 Royal Gala Apples
  • 1 tsp Runny Honey

Salsa

  • 1 Mango, peeled, stoned and chopped
  • 2 Kiwis, peeled and chopped
  • ½ tsp Chilli Flakes
  • 1 tbsp Fresh Coriander, chopped
  • Juice from ½ Lime
  • 1 tbsp Olive Oil

  

Method

  1. Mix the salsa ingredients together, adding seasoning to taste and set aside.
  2. Trim any excess fat from the gammon.
  3. Core and cut the apples into wedges and then drizzle with honey.
  4. Cook the gammon and apples either under a medium grill or in a frying pan, turning once.
  5. Whilst the gammon is cooking, heat the olive oil over a medium heat in a large pan, add the kale and chick peas and cook, stirring gently until the kale is tender.
  6. Stir through the pesto sauce.
  7. Serve the gammon and apples with the salsa and cooked kale.
