Pulled Pork and Caramelised Onion Yorkshire Wraps

Ingredients

  • 400g of Pulled Pork
  • 85g of Stuffing Mix
  • 3/4 Parsnips
  • 1 Red Onion
  • 2 tbsps of Honey
  • 1 Jar of Apple Sauce
  • 1 Jar of Cranberry Sauce
  • 4 Eggs
  • 250ml of Milk
  • 5 Oz Plain Flour
  • 2 tbsps of Onion Gravy Granules
  • Pepper
  • Olive Oil
  • Salt

Method

  1. Cook pulled pork in the oven on 200°C for 35 minutes then shred and add sauce. Place in a small bowl.
  2. Meanwhile, cut parsnips into wedges, season with salt and pepper and drizzle with honey and put in the oven for 35 minutes too.
  3. Prepare the stuffing mix using water instructed on box, add it to a greased baking tray in a thin layer and also place in the oven for 35 minutes. Once cooked, remove and break into bits and place in a bowl.
  4. Slice your onion and fry in 1 tablespoon of honey and some oil on low for 20 minutes to caramelise then add to another bowl.
  5. Meanwhile, prepare your Yorkshire wraps by mixing the flour and eggs in a bowl until smooth. Slowly add the milk until smooth.
  6. Heat some oil up in a pan and add a thin layer of the mix and swirl into a circle. Fry for a few minutes until really crispy then flip over and do them same on the other side. Roll them up and set them aside to use as wraps later.
  7. Remove everything from the oven. Layer the wraps with pulled pork, onions, parsnips, apple sauce and stuffing.
