Pulled Pork and Caramelised Onion Yorkshire Wraps

Ingredients
- 400g of Pulled Pork
- 85g of Stuffing Mix
- 3/4 Parsnips
- 1 Red Onion
- 2 tbsps of Honey
- 1 Jar of Apple Sauce
- 1 Jar of Cranberry Sauce
- 4 Eggs
- 250ml of Milk
- 5 Oz Plain Flour
- 2 tbsps of Onion Gravy Granules
- Pepper
- Olive Oil
- Salt
Method
- Cook pulled pork in the oven on 200°C for 35 minutes then shred and add sauce. Place in a small bowl.
- Meanwhile, cut parsnips into wedges, season with salt and pepper and drizzle with honey and put in the oven for 35 minutes too.
- Prepare the stuffing mix using water instructed on box, add it to a greased baking tray in a thin layer and also place in the oven for 35 minutes. Once cooked, remove and break into bits and place in a bowl.
- Slice your onion and fry in 1 tablespoon of honey and some oil on low for 20 minutes to caramelise then add to another bowl.
- Meanwhile, prepare your Yorkshire wraps by mixing the flour and eggs in a bowl until smooth. Slowly add the milk until smooth.
- Heat some oil up in a pan and add a thin layer of the mix and swirl into a circle. Fry for a few minutes until really crispy then flip over and do them same on the other side. Roll them up and set them aside to use as wraps later.
- Remove everything from the oven. Layer the wraps with pulled pork, onions, parsnips, apple sauce and stuffing.
