Pulled Italian Chicken Stew

Ingredients
- 2x White Onions, Chopped
- 4x Chicken Thighs, Bone And Skin Removed
- 4x Cloves Garlic, Chopped
- 2 Tbsp. Tomato Purée
- 1x Tin Chopped Tomatoes
- 200ml Chicken Stock
- 500g Miniature Potatoes, Halved
- 2 Tsp. Basil Pesto
- 2 Tbsp. Balsamic Vinegar
- 2 Tbsp. Grated Parmesan
- 1 Tbsp. Italian Seasoning
- 1 Tbsp. Butter
- 1x Large Handful Baby Spinach
- 1x Small Handful Fresh Basil, Chopped
- Extra Parmesan And Basil Pesto For Serving
Method
- Add all ingredients apart from spinach and parmesan to the slow cooker, stir, and cook on low for 6 hours.
- When cooked, use two forks to pull the chicken apart, add in spinach, basil, and parmesan, and stir together.
- Place the stew into bowls, top with a drizzle of pesto and a sprinkle of parmesan, and serve with warm crusty buttered bread.
