Mushroom Alfredo Gnocchi

A quick easy dinner made in the air fryer, who doesn't love crispy gnocchi!

Ingredients  

  • 2x Small Red Onions, Finely Chopped
  • 500g Mushrooms
  • 500g Gnocchi
  • 100g Baby Spinach, Finely Chopped
  • 4x Cloves Garlic, Chopped
  • 125g Mascarpone
  • 50g Grated Grana Padano
  • 200ml Of Chicken Or Veg Stock
  • Dried/Fresh Parsley For Serving
  • Olive Oil

  • 4x Cloves Garlic, Chopped
  • 125g Mascarpone
  • 50g Grated Grana Padano

Method

  1. Finely chop the red onions and sweat them off in a large frying pan with some olive oil.
  2. Finely chop your garlic and add it to the frying pan with the mushrooms. Cook for 5-10 minutes until all liquid has disappeared.
  3. Meanwhile, place your gnocchi into the air fryer, add a drizzle of oil to get it really crispy. If you don't have an air fryer, you could fry the gnocchi in a separate frying pan with a little oil and chop up your spinach.
  4. Add your stock to the pan with the mascarpone and stir well, then add in your chopped spinach and Grana Padano cheese and cook for 2 more minutes. Add salt and black pepper to taste then serve with some warm buttered bread.
