Mixed Bean Chilli

This is one of my family's absolute favourites.

Ingredients

  • 3 or 4 Medium Onions
  • Tomato Purée 50g
  • 4x Garlic Cloves
  • 1 Tbsp. Cumin
  • 1 Tbsp. Paprika
  • 1 Tbsp. Chilli Powder
  • 2x Large Bell Peppers
  • Mixed Beans 1,200g 720g Drained
  • 1x 400g Tinned Tomatoes Chopped
  • 2x Vegetable Stock Cubes

Method

  1. Chop the onions and garlic. Add a drizzle of oil to a pan and add the onions and garlic.
  2. While the onions and garlic soften, chop the peppers into small chunks.
  3. Add the peppers into the mix with the tomato puree, cumin, paprika, and chili powder.
  4. Stir the ingredients together before adding in the tinned tomatoes, mixed beans, and vegetable stock cubes.
  5. Leave to simmer for about 20-30 minutes before serving up.
  6. Serve with either rice or tacos.
