Massaman Baked Salmon

Ingredients

  • 400g Frozen Salmon Fillets
  • Massaman Curry Meal Kit
  • 1 Large, Loose Sweet Potato
  • 1 Onion
  • 4 Cloves Garlic
  • 500g Cooked Rice
  • 200ml Chicken Stock (Or Coconut Milk)
  • 200ml Coconut Milk (Or Chicken Stock)

  • Lime
  • Coriander
  • Olive Oil

Method

  1. Preheat the oven to 200 degrees. Add washed rice to a pan of boiling, salted water and cook for 15 minutes.
  2. Meanwhile, peel the sweet potato and garlic and chop the onion. Chop them up, add the sweet potato to a pan of boiling water and boil for ten mins and set the onion and garlic aside.
  3. Add the Massaman curry paste from the curry kit to a jug but remove a teaspoon of it for the salmon. Add the coconut milk, stock and herbs and mix.
  4. Add the cooked rice to a large, deep baking dish, scatter the sweet potato on top with the onion and garlic. Pour the sauce over then add the salmon fillets on top.
  5. Brush the salmon fillets with the remaining curry paste, season with salt, pepper and chilli flakes, drizzle with oil, cover with foil and place in the oven for 40 minutes.
  6. Remove from oven, sprinkle the crushed nuts from the curry kit over the top and serve with some fresh lime and coriander if you have them.
