Massaman Baked Salmon

Ingredients
- 400g Frozen Salmon Fillets
- Massaman Curry Meal Kit
- 1 Large, Loose Sweet Potato
- 1 Onion
- 4 Cloves Garlic
- 500g Cooked Rice
- 200ml Chicken Stock (Or Coconut Milk)
- 200ml Coconut Milk (Or Chicken Stock)
- Serve with
- Lime
- Coriander
- Olive Oil
Method
- Preheat the oven to 200 degrees. Add washed rice to a pan of boiling, salted water and cook for 15 minutes.
- Meanwhile, peel the sweet potato and garlic and chop the onion. Chop them up, add the sweet potato to a pan of boiling water and boil for ten mins and set the onion and garlic aside.
- Add the Massaman curry paste from the curry kit to a jug but remove a teaspoon of it for the salmon. Add the coconut milk, stock and herbs and mix.
- Add the cooked rice to a large, deep baking dish, scatter the sweet potato on top with the onion and garlic. Pour the sauce over then add the salmon fillets on top.
- Brush the salmon fillets with the remaining curry paste, season with salt, pepper and chilli flakes, drizzle with oil, cover with foil and place in the oven for 40 minutes.
- Remove from oven, sprinkle the crushed nuts from the curry kit over the top and serve with some fresh lime and coriander if you have them.
