Marry Me Mini Sausage Pies

Ingredients
- 10 Sausages
- 1 tbsp Oil
- 1 Onion, sliced
- 2 Garlic Cloves, crushed
- 375ml Chicken Stock
- 300ml Double Cream
- 90g Sundried Tomatoes, sliced
- 80g Parmesan, grated
- 75g Baby Spinach
- 320g Ready Rolled Puff Pastry
- 1 Egg, beaten
- Heart-shaped pastry cutters
Method
- Pre-heat the oven to Electric 200oC/Fan 180oC/Gas Mark 6.
- Cook the sausages as per the pack cooking instructions.
- Heat the oil in a large pan and cook the onion and garlic for 5-10 minutes until softened and starting to caramelise.
- Add the chicken stock and double cream and bring to a simmer. Then, add the sundried tomatoes, parmesan and spinach.
- Slice each sausage into 4 or 5 chunks and add into the pie filling.
- Divide between your pie dishes or ramekins.
- Use the heart-shaped cutters to cut out as many pastry hearts as possible from the sheet of puff pastry.
- Top the filling with the pastry hearts and brush with the beaten egg.
- Bake for 20-25 minutes until the pastry is golden and serve.
