Marry Me Mini Sausage Pies

Ingredients

  • 10 Sausages
  • 1 tbsp Oil
  • 1 Onion, sliced
  • 2 Garlic Cloves, crushed
  • 375ml Chicken Stock
  • 300ml Double Cream
  • 90g Sundried Tomatoes, sliced
  • 80g Parmesan, grated
  • 75g Baby Spinach
  • 320g Ready Rolled Puff Pastry
  • 1 Egg, beaten  
  • Heart-shaped pastry cutters  

  

Method

  1. Pre-heat the oven to Electric 200oC/Fan 180oC/Gas Mark 6.
  2. Cook the sausages as per the pack cooking instructions.
  3. Heat the oil in a large pan and cook the onion and garlic for 5-10 minutes until softened and starting to caramelise.
  4. Add the chicken stock and double cream and bring to a simmer. Then, add the sundried tomatoes, parmesan and spinach.
  5. Slice each sausage into 4 or 5 chunks and add into the pie filling.
  6. Divide between your pie dishes or ramekins.
  7. Use the heart-shaped cutters to cut out as many pastry hearts as possible from the sheet of puff pastry.
  8. Top the filling with the pastry hearts and brush with the beaten egg.
  9. Bake for 20-25 minutes until the pastry is golden and serve.
