Maple Syrup Pulled Pork Waffle Sliders

Ingredients
- 6 Toasting Waffles
- 200g Slow Cooked BBQ Pulled Pork with Sauce
- 1 Red Onion, finely sliced
- 1 Red Chilli, chopped into thin slices
- Juice of ½ a Lemon
- ½ tsp Caster Sugar
- 100ml Soured Cream/Crème Fraiche
- 20g Thyme
- 1 tbsp Maple Syrup, to drizzle over
Method
- Take the sliced onion and chilli and place them in a small bowl with the lemon and sugar, add a drop of boiling water and allow them to sit for around 1 hour.
- Cook the pulled pork as per the cooking instructions, shred it, then stir through the BBQ sauce.
- Toast the waffles
- Top the waffles with the pulled pork, a dollop of the soured cream, the relish and garnish with thyme. Pour over a splash of maple syrup and enjoy.
