Maple Syrup Pulled Pork Waffle Sliders

Serves: 6 people   |   Prep time: 10 minutes, plus 1 hour for the pickles   |   Cooking time: 35 minutes

Ingredients

  • 6 Toasting Waffles
  • 200g Slow Cooked BBQ Pulled Pork with Sauce
  • 1 Red Onion, finely sliced
  • 1 Red Chilli, chopped into thin slices
  • Juice of ½ a Lemon
  • ½ tsp Caster Sugar
  • 100ml Soured Cream/Crème Fraiche
  • 20g Thyme
  • 1 tbsp Maple Syrup, to drizzle over

  

Method

  1. Take the sliced onion and chilli and place them in a small bowl with the lemon and sugar, add a drop of boiling water and allow them to sit for around 1 hour.
  2. Cook the pulled pork as per the cooking instructions, shred it, then stir through the BBQ sauce.
  3. Toast the waffles
  4. Top the waffles with the pulled pork, a dollop of the soured cream, the relish and garnish with thyme. Pour over a splash of maple syrup and enjoy.
