Macaroni Cheese and Chorizo Bake

This tasty twist on the classic Mac 'n' Cheese is a perfect family meal.

Ingredients
- 500g Macaroni Pasta, cooked and cooled
- 120g Broccoli Florets, cooked and cooled
- 1 tbsp Olive Oil
- 1 large White Onion, finely chopped
- 120g Chorizo Ring (classic or spicy), skin removed and chopped into pieces
- 40g Butter
- 3 heaped tbsp Plain Flour
- 700ml Whole Milk
- 1 tsp English Mustard
- 100g Soft Cheese
- ¼ tsp Cracked Black Pepper
- 150g Extra Mature Cheddar, grated
- 250g Grated Mozzarella
- 1 slice of stale/hard White Bread, grated into breadcrumbs
- 15g Parsley, roughly chopped
Method
- Preheat the oven to 200°C/180°F / Gas Mark 6.
- Take a large frying pan and heat the oil on a medium-high heat, caramelise the onion and brown the chorizo to release the flavours, for 6-8 minutes.
- Take a large casserole dish and put it on a medium-low heat, add the butter and once it’s melted add the flour and stir until combined. Cook for 1 minute stirring constantly, then begin adding the milk a little at a time continuously stirring with a whisk and simmer gently until the sauce has thickened. Stir in the mustard, black pepper and cheese, reserving 100g of mozzarella for the top.
- Tip the chorizo, onions, broccoli and pasta in with the cheese sauce and mix well, top with the breadcrumbs and mozzarella cheese.
- Bake for 15-20 minutes until the cheese bubbles, sprinkle with parsley and serve.
