Loaded Chorizo Sweet Potatoes

Loaded Sweet Potatoes stuffed with garlic, chorizo and mozzarella. Yum!

Ingredients
- Specially Selected Pork Chorizo Style Sausages
- 1 Teaspoon Chicken Seasoning
- 125g Fresh Mozzarella, Sliced
- 4 Sweet Potatoes
- 1 Onion, Chopped
- 4 Cloves Of Garlic, Minced
- 4 Tablespoons Natural Yoghurt
- 3 Spring Onions, Chopped
- 1 Handful Fresh Coriander, Chopped
- Olive Oil
- Salt
- Pepper
Method
- Preheat the oven to 200 degrees.
- Drizzle olive oil over 4 sweet potatoes and season with salt and pepper then rub the oil in. Place in microwave for 10 minutes (15 if using large loose sweet potatoes) then remove, place on a baking tray and cover with foil and place in the oven for 45 mins.
- Whilst they’re cooking, add the chopped onion to a frying pan with the garlic and fry for a few minutes to soften. Then squeeze the sausage meat from the inside of the chorizo style sausages into the pan with the seasoning, use a spatula to break to the meat up and let it fry for around 10 minutes. Turn off the heat until the sweet potatoes are ready.
- When they’re ready, remove them, cut the skin down the middle and open them up. Turn the heat back onto the sausage meat, add the chopped mozzarella to the top of the meat and cover with a lid for a few minutes so it melts.
- Pour the cheese topped sausage directly inside each sweet potato. Top with yoghurt. Spring onion and fresh coriander.
