Italian Cod

Ingredients

  • 1 x pack 250g – 2 Fresh Cod Fillets
  • 135g Cherry Tomatoes
  • 150ml White Wine
  • 1 x Clove garlic
  • Pinch of Chilli Flakes
  • 1 x tsp Dried Parsley
  • 10ml Lemon Juice
  • 2 x Slices Parma Ham

Method

  1. Preheat the oven to 200°c/400°f/gas 6
  2. Cut the tomatoes into quarters
  3. Peel and finely chop the garlic
  4. Put the cherry tomatoes, garlic, white wine, parsley, lemon juice and chilli into a small saucepan – bring to the boil – put on the lid and simmer gently for 5 mins
  5. Meanwhile – cut the cod steaks or fold them to make two neat parcels – wrap the Parma ham around them
  6. Put the tomato sauce into a small roasting dish
  7. Put the cod parcels on top
  8. Roast in the oven for 20 mins
