Ingredients
- 1 x pack 250g – 2 Fresh Cod Fillets
- 135g Cherry Tomatoes
- 150ml White Wine
- 1 x Clove garlic
- Pinch of Chilli Flakes
- 1 x tsp Dried Parsley
- 10ml Lemon Juice
- 2 x Slices Parma Ham
Method
- Preheat the oven to 200°c/400°f/gas 6
- Cut the tomatoes into quarters
- Peel and finely chop the garlic
- Put the cherry tomatoes, garlic, white wine, parsley, lemon juice and chilli into a small saucepan – bring to the boil – put on the lid and simmer gently for 5 mins
- Meanwhile – cut the cod steaks or fold them to make two neat parcels – wrap the Parma ham around them
- Put the tomato sauce into a small roasting dish
- Put the cod parcels on top
- Roast in the oven for 20 mins
