Ingredients  

  • 600g Boneless Chicken Thigh Fillets
  • 4 Ciabattas
  • 1 Sachet Honey Chipotle Seasoning
  • 4 Tablespoons Of Honey
  • 4 Tablespoons Hot Sauce (Optional)
  • 2 Teaspoons Of Butter

For The Slaw

  • 4 Spring Onions, Chopped
  • 1 Onion, Sliced
  • 1 Carrot, Grated  
  • 2 Tablespoons Mayo
  • Splash Of White Wine Vinegar  
  • Drizzle Of Hot Sauce (Optional)

Method

  1. Preheat the grill to a medium heat. Add the chicken to an oven proof dish with the seasonings, 4 tablespoons of honey and 2 teaspoons of butter. Cover with a lid or foil and cook on 150 degrees for 3 hours.
  2. To make the slaw, chop the spring onions and onion and grate the carrot, add them to a bowl with 2 tablespoons of mayo, a drizzle of hot sauce, a splash of white wine vinegar and mix.
  3. When the chicken is cooked, use two forks to shred it, slice the ciabattas in half and place them under the grill for 2/3 minutes to warm through then spoon some into the warm ciabattas with some slaw on top and fresh coriander if you like it and serve
