Ingredients
- 600g Boneless Chicken Thigh Fillets
- 4 Ciabattas
- 1 Sachet Honey Chipotle Seasoning
- 4 Tablespoons Of Honey
- 4 Tablespoons Hot Sauce (Optional)
- 2 Teaspoons Of Butter
For The Slaw
- 4 Spring Onions, Chopped
- 1 Onion, Sliced
- 1 Carrot, Grated
- 2 Tablespoons Mayo
- Splash Of White Wine Vinegar
- Drizzle Of Hot Sauce (Optional)
Method
- Preheat the grill to a medium heat. Add the chicken to an oven proof dish with the seasonings, 4 tablespoons of honey and 2 teaspoons of butter. Cover with a lid or foil and cook on 150 degrees for 3 hours.
- To make the slaw, chop the spring onions and onion and grate the carrot, add them to a bowl with 2 tablespoons of mayo, a drizzle of hot sauce, a splash of white wine vinegar and mix.
- When the chicken is cooked, use two forks to shred it, slice the ciabattas in half and place them under the grill for 2/3 minutes to warm through then spoon some into the warm ciabattas with some slaw on top and fresh coriander if you like it and serve
