Hot Halloumi and Peanut Noodles

A midweek meal that’s packed with flavour and budget-friendly.

Ingredients

  • 1 Pack Of Halloumi
  • 3 Tbsps Honey Or Maple Syrup
  • 400g Dried Egg Noodles
  • 4 Spring Onions, Chopped
  • 1 Small Handful Coriander, Chopped
  • 4 Cloves/1 Tbsp Minced Garlic
  • 1/2 Red Pepper, Chopped
  • 2 Tbsps Soy Sauce
  • 1 Tbsp Minced Ginger
  • 2 Tbsps Peanut Butter
  • 200ml Water Or Coconut Milk
  • Chilli Flakes (Optional)

Method

  1. Slice your halloumi into 12 thin pieces. In a small jug or bowl, add the honey and some chilli flakes if you like a bit of heat. Coat the halloumi in the honey
  2. Add the halloumi to a large frying pan with a little oil and fry on both sides until golden then remove.
  3. Add plenty of water to a large sauce pan and heat until it comes to a bowl.
  4. Meanwhile make your sauce. Add the nut butter, soy sauce and water or coconut milk to jug and mix to create a paste.
  5. Add the noodles to the boiling water and cook for 4 minutes. Meanwhile, add the chopped pepper and spring onions to a frying pan with the garlic and ginger and a little oil and fry for a few minutes until softened. Add the peanut paste to the frying pan and bring to a simmer.
  6. Drain the noodles and add them straight to the sauce mixture and mix. Add in the fresh coriander and combine everything. Divide into 4bowls immediately so the noodles stay chewy.
  7. Top with 3 slices of halloumi and some more coriander and sesame seeds if you have them
